Last Thursday evening saw Managing Partner Brendan Pang, and Compliance Solicitor Karen attend a game cookery demonstration at Frogmary Green Farm, with celebrated Game chef Tim Maddams. We learnt all sorts of tips, from the preparation of the game, to the secret of easy peeling of ginger (use a spoon!). Tim was both informative and entertaining. We enjoyed tasting pheasant bao (a type of chinese dumpling), teal with celeriac and carrot pottage and mallard with polenta and kale, all washed down with a glass of wine or sparkling grape juice.
